4 tablespoons oil
2 large onions, finely sliced
1 cinnamon stick
1 all spice
1 cardamom pod
2 teaspoons garlic, finely grated
2 teaspoons ginger, finely grated
1 chili, finely chopped
500 grams lamb pieces
2 tomatoes or 200 grams of canned tomatoes
70 grams tomato paste
1 teaspoon salt
1 teaspoon brown sugar
1 teaspoon pepper
1 cup of water
4 medium potatoes cut into cubes
10 grams coriander, finely chopped
Step 1: Place your pot over a medium to high heat and add oil
Step 2: Add onion and whole spices and sauté till onion is slightly golden brown.
Step 3: Add ginger, garlic and chilli and cook for 30 seconds.
Step 4: Add meat, tomatoes and tomato paste.
Step 5: Add salt, pepper and sugar.
Step 6: Add 1 cup of water, ,mix well and cook for 20 minutes with a covered lid.
Step 7: Add potatoes and cook for another 20 to 30 minutes or until meat and potatoes are cooked soft.
Step 8: Add chopped coriander and serve.
Best served with basmati rice.
