Tom Yum Soup
100 grams of a good quality tom yum paste
1 litre of boiling water
250 grams of mushrooms
100 grams of spring onion
1 tablespoon fish sauce
1 teaspoon brown sugar
Step 1: Place a medium sized wok or pot over a high heat.
Step 2: Add paste and 1 litre of boiling water.
Step 3: Mix well until the paste has fully dissolved.
Step 4: Cover with a lid and allow this to come to a boil.
Step 5: Let the mixture boil for a couple of minutes.
Step 6: Add the mushrooms and half of the mushrooms.
Step 7: Cook for 2 to 3 minutes.
Step 8: Remove from the heat and serve immediately.
This meal is perfect to have on its own or if you wish, feel free to have it with some delicious pot stickers or dim sum.
