Spaghetti
and Meatballs

Ingredient List (Spaghetti):

250 grams spaghetti

1 teaspoon salt

 

Ingredient List (Meatballs):

500 grams minced meat *see note below

2 teaspoons garlic, finely minced

1 teaspoon ground coriander

1 teaspoon ground cumin

1 onion, finely grated

2 slices of bread

1 egg

2 teaspoons dried parsley

1 teaspoon salt

1 teaspoon pepper

 

Ingredient List (Sauce):

1 can/400 grams tomatoes

1/4 cup tomato sauce

1 teaspoon brown sugar

1 small onion

1 teaspoon oregano

2 tablespoons olive oil

1/4 teaspoon salt (or to taste)

1/2 teaspoon pepper

1/2 teaspoon chilli flakes

Method (Spaghetti):

Step 1: Cook spaghetti with 1 teaspoon salt according to the instructions on the packaging. 

Step 2: Just before you're about to drain the pasta, remove 1 cup of the pasta water and set aside. 

Step 3: Drain the pasta and wash with cold water. 

Step 4: Set aside.

Method (Meatballs):

Step 1: Add all of the ingredients into a bowl.

Step 2: Mix well then roll mixture into balls. 

Step 3: Place the balls in the fridge and allow it to set for at least 30 minutes. 

Step 4: Fry the balls in some oil or air fry them for around 10 minutes or until the balls are caramalised (they do not need to be cooked through completely). 

Step 5: Once all the balls are fried, set  them aside. 

Method (Sauce):

Step 1: Place all of the ingredients into your blender. 

Step 2: Blend for 30 seconds to 1 minute or until the mixture is smooth. 

Step 3: Place the sauce into a medium sized pot over a medium heat. 

Step 4: Add the pasta water and allow the mixture to come to a boil and thicken slightly (about 10 minutes).

Step 5: Place meatballs into the sauce and cook for 7 minutes on a low to medium heat. 

Step 6: Serve hot with spaghetti.

Notes: If you're using a really lean mince like the one from Woolworths, grate about 50 grams of butter into the meatballs mixture. This will ensure that you don't end up with dry meatballs.
