Saucy Chicken and Mushroom Pie

Ingredient List:

2 chicken breasts, cut into small pieces

1/2 teaspoon salt

1/2 teaspoon pepper

1 tablespoon olive oil

1 can/400 grams mushroom soup

1 tablespoon maizena/cornflour

1 teaspoon curry powder

1 green chilli, finely chopped

125 grams sliced mushrooms

2x250 grams butter puff pastry


Step 1: Season chicken with salt and pepper. 

Step 2: Drizzle over the olive oil. 

Step 3: Place a small pot over a medium heat and add chicken. 

Step 4: Cook for around 7 minutes. 

Step 5: Remove the chicken from the pot and keep aside. 

Step 6: In the same pot, add the can of the soup. 

Step 7: Quickly whisk in the cornflour and allow it to come to a boil. 

Step 8: Add curry powder, chilli and mushrooms and cook for another 7 minutes. 

Step 9: Remove it from the heat and allow to cool for about 10 to 20 minutes, 

Step 10: Preheat the oven to 180 C without fan

Step 11: Place one sheet of pastry at the bottom of your pie dish, 

Step 12: Add filling. 

Step 13: Place the second sheet of pastry over the top. 

Step 14: Use a fork to neaten the edges.

Step 15: Brush the top of the pie with egg wash.

Step 16: Bake for 30 to 35 minutes or until the top of pie is golden brown. 

Step 17: Remove the pie from the oven and allow it to cool for around 10 minutes before cutting into it. 

Serve with salad or grilled vegetables.
