Salmon Curry

Ingredient List:
2 tablespoons oil
1 onion, finely sliced
1/2 teaspoon fenugreek seeds
5 curry leaves
2 potatoes, cut into cubes
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon chilli powder
200 grams canned tomatoes
2 teaspoons garlic, finely grated
170 grams pink salmon pieces
1 cup peas
200 ml coconut milk
5 grams coriander, finely chopped
Method:
Step 1: In a medium sized pot, add oil and place on a medium heat.
Step 2: Add onion, fenugreek and curry leaves and sauté till onions are soft and light brown in colour.
Step 3: Add potatoes, tomatoes, ground spices, salt and garlic and cook till potatoes are just about soft.
Step 4: Add salmon, peas and coconut milk and cook for 10 minutes on a low to medium heat.
Step 5: Add coriander and serve hot.
Best served with rice.
