Roasted Chilli and Garlic Noodles

Ingredient List (Noodles):

3 packets two minute noodles

1 teaspoon salt

Water (to cook noodles in)


Ingredient List (Stir Fry):

4 tablespoons cooking oil

2 tablespoons garlic, finely chopped

4 teaspoons chilli flakes.

300 grams chicken breast fillets, cut into strips

1 teaspoon salt (or to taste)

1 teaspoon ground black pepper

3/4 green capsicum/ pepper, cut julienne

3/4 yellow capsicum/pepper, cut julienne

3/4 red capsicum/pepper, cut julienne

2 carrots, cut julienne

1 large brown onion, cut julienne

50 grams spring onion, chopped into small rings

60 grams cashews

20 grams basil leaves

2 tablespoons sweet soy sauce

1 tablespoon rice vinegar

1 tablespoon fish sauce


Method (Noodles): 

Step 1: Bring a large pot of water to a boil with salt then add noodles.

Step 2: Cook for around 4 minutes or until noodles are just about cooked.

Step 3: Remove 1 cup of the pasta water (to be used later), then drain pasta.

Step 4: Wash with cold water and set aside.


Method (Stir Fry)

Step 1: Place a large wok or pan on a high heat. Then add 2 tablespoons of oil.

Step 2: Add brown onion, carrots and peppers and cook till tender and has a slight char to it.

Step 3: Season with some salt and pepper.

Step 4: Remove vegetables and set aside.

Step 5: Reduce your heat to medium and then in the same wok or pot, add the rest of the oil. 

Step 6: Add chilli flakes and garlic and sauté for 30 seconds to 1 minute. Stir constantly to avoid it burning.

Step 7: Add chicken and cashews. Cover with a lid and cook for 10 minutes or until chicken is cooked. 

Step 8: Add back vegetables, half of the basil leaves, noodles and half of the spring onion.

Step 9: Add the sauces and vinegar and mix well.

Step 10: Add 1/2 to 1  cup of the pasta water, Cover with a lid and cook for another 7 minutes.

Step 11: Check seasoning and then serve immediately with more basil leaves.
