Roasted Butternut and Feta Salad
500 grams butternut, peeled and cubed
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon mixed herbs
1 teaspoon garlic, finely grated
1 1/2 tablespoons olive oil
1 teaspoon honey
1 tablespoon balsamic vinegar
80 grams baby spinach
100 grams feta
Step 1: Preheat oven to 200 °C with fan.
Step 2: In medium sized bowl, add butternut, salt, black pepper, mixed herbs, garlic and olive oil. Mix well.
Step 3: Place in the oven for 30 minutes,
Step 4: Then remove from the oven, drizzle over honey, mix and place back in the oven for 5 minutes or until butternut is soft.
Step 5; To assemble your salad, add spinach to a large dish, then butternut, followed by feta.
Step 6: Drizzle over the vinegar and serve.
