Ingredient List:

200 grams pad Thai noodles

2 chicken breasts, thinly sliced

3 tablespoons corn flour

1/2 teaspoon salt

1/4 teaspoon pepper

3 tablespoons oil

1 onion, cut into strips

2 teaspoons garlic, finely chopped

1 red chilli, finely chopped

100 grams bean sprouts

50 grams peanuts, roughly chopped

2 eggs, lightly scrambled 

Ingredient List (Sauce):

3 tablespoons sugar

2 1/2 tablespoons fish sauce

1 tablespoon soy sauce

1 1/2 tablespoons rice vinegar

1 tablespoon tomato sauce

1 red chilli, finely chopped

Method:

Step 1: Add sauce ingredients into a bowl. Mix well and set aside.

Step 2: Cook noodles according to packaging instructions and set aside.  

Step 3: Coat chicken in salt, pepper and corn flour.    

Step 4: Add 2 tablespoons of oil to a non stick wok or a large deep pan.

Step 5: Fry chicken for 2 to 3 minutes or until brown on both sides. 

Step 6: Remove chicken, then add the remainder of the oil.  

Step 7:  Turn up the heat somewhere between medium and high and add onion and saute till onions are slightly charred. 

Step 8: Add garlic and chilli and cook for 30 seconds, constantly stirring.

Step 9: Add half of the peanuts and bean sprouts and cook for 30 seconds. 

Step 10: Add eggs and cook for about 3 to 5 minutes or until eggs are cooked.  

Step 11: Add noodles and sauce and cook for 5 minutes on a low to medium heat. Serve immediately!
