Homemade Nando's Strips and Rice

Ingredient List:

400 grams chicken breast fillets, cut into thin slices

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1/2 teaspoon chilli powder

2 teaspoons salt

1 tablespoon cooking oil

1/2 cup extra hot Nando's sauce

1/3 cup tomato sauce

2 tablespoons mayo

1 1/2 cups uncooked rice

3 1/2 cups water

1 tablespoon olive oil

1/4 teaspoon turmeric

1/2 teaspoon paprika

1 cup frozen mixed veg

Method: 

Step 1: Marinate chicken in cumin, coriander, chilli powder and 1 teaspoon salt. 

Step 2: Add 1 tablespoon cooking oil to a small to medium sized pot and place on a medium heat.   

Step 3: Add chicken, then cover with a lid and cook for 7 to 10 minutes or until chicken is cooked.  

Step 4: Once chicken is cooked, remove from the heat, place in a bowl and set aside.

Step 5: Using the same pot, add all your sauces and bring to a boil on a low to medium heat. 

Step 6; Then add back the chicken, cover with a lid and cook for another 2 to 3 minutes on a low heat,  ​

Step 7: In a medium sized pot, bring the rice to a boil with 3 cups of water and 1 teaspoon salt. 

Step 8: Once rice is cooked, drain water and set aside. 

Step 9: In the same pot, add olive oil, turmeric and paprika. 

Step 10: Add mixed veg, rice and 1/2 cup of water.

Step 11: Mix gently using a fork. Then cover with a lid and steam for 10 minutes on a low heat. 

Step 12: Serve hot with chicken strips.
