Moong Bean and Potato Fry

Ingredient List:

2 tablespoons oil

1 large onion, thinly sliced

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 teaspoon ginger, finely grated or chopped

1 teaspoon garlic, finely grated or chopped

1 teaspoon turmeric

1 teaspoon salt

1/2 teaspoon pepper

1 red chilli

1/2 teaspoon chilli powder

4 medium potatoes, cut into cubes

1 cup whole mung/moong beans, soaked for 2 hours

10 grams coriander, finely chopped

Method:

Step 1: In two separate pots, bar boil your beans and potatoes.  

Step 2: Drain them and set aside. 

Step 3: Place a large pan over a medium heat.  

Step 4: Add oil. 

Step 5: Add onion, cumin and mustard seeds and sauté till onion is soft.   

Step 6: Add ginger, garlic, pepper, salt, turmeric, chilli, and chilli powder. 

Step 7: Add potatoes, moong beans and 1 cup of water and cook for 15 minutes or until potatoes and moong beans are cooked. 

Step 8: Add chopped coriander and serve.

Best served with any flat bread such as roti or naan.
