Grilled Chicken and Mango Salad

Ingredient List (Salad):

4 chicken breasts

1 teaspoon salt

1 teaspoon pepper

2 tablespoons olive oil

2 mangoes, cut into cubes

1 avocado, cut into cubes

1/2 english cucumber, sliced into thin rings

1/2 red onion, finely sliced

romaine lettuce, roughly chopped

2 red chillies, finely chopped

10 grams coriander, finely chopped

Ingredient List (Salad Dressing):

Juice of 1 lemon

2 tablespoons mustard sauce

1 tablespoon honey

1/2 teaspoon black pepper

1 tablespoon olive oil

1/2 teaspoon mixed herbs

Method (Salad Dressing):

Step 1: Add all of the ingredients to a bowl. 

Step 2: Whisk well and set aside. 

Method (Salad):

Step 1: Flatten the chicken breast by using a rolling pin or mallet. 

Step 2: Season the chicken with salt and pepper.  

Step 3: Place a griddle or regular pan on a medium to high heat.  

Step 4: Add olive oil and then add your chicken breasts. 

Step 5: Cook for 3 to 4 minutes on each side or until cooked. 

Step 6: Remove the chicken from the pan, then cut it into slices. 

Step 7: Start assembling your salad by using a large or 4 small to medium sized bowls.

Step 8: Add your lettuce, followed by sliced chicken, cucumber, red onion, avo, chilli and finally mango. 

Step 9: Drizzle over some of the salad dressing and add chopped coriander.
