Ginger and Soy Stir Fry

Ingredient List:

2 tablespoons oil

1 tablespoon ginger, finely grated

1 teaspoon garlic, finely grated

300 grams chicken breasts, sliced into thin pieces

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon chilli flakes

1 onion, roughly chopped

375 grams green medley veg

1 red pepper, roughly chopped

250 grams brown mushrooms, finely sliced

1/4 cup sweet soy sauce

1/2 tablespoon fish sauce

 

Method: 

Step 1: Add 1 tablespoon oil to a large wok, pan or pot.

Step 2: Add ginger, garlic and chilli flakes and sauté for 30 seconds. 

Step 3: Add chicken and 1/2 teaspoon salt. Cover with a lid and cook for 7 minutes or until chicken is cooked. 

Step 4: Remove chicken and set aside.

Step 5: In the same dish, add the rest of the oil.

Step 6: Add onion and pepper and cook for 1 minute. 

Step 7: Add the rest of the veg, salt and pepper then cover with a lid and cook for 7 minutes.  

Step 8: Add back chicken, and sauces, cover with a lid and cook for 5 minutes. Serve hot.

Best served with jasmin rice.
