Fried Calamari Salad

Ingredient List (Calamari):
400 grams calamari rings
2 eggs
1 cup buttermilk *see note below
1 cup flour
1/2 cup cornflour/maizena
1 tablespoon cajun or portuguese spice
2 teaspoons parsley
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups of oil to fry calamari
Ingredient List (Salad):
100 grams lettuce
1/2 english cucumber
1/2 red onion
Juice of 1 lemon
salt and pepper to taste
Optional tartar sauce to serve.
Method (Calamari):
Step 1: Add milk, eggs into a medium sized bowl.
Step 2: Mix well, then add calamari and set aside.
Step 3: Add the dry ingredients to another bowl and mix.
Step 4: Add oil to small pot and place on a medium to high heat.
Step 5: Once oil is hot, dip some of the calamari into the dry ingredients.
Step 6: Place into the oil and fry for no longer than 60 seconds.
Step 7: Do not overcrowd the pot as this will reduce the heat of the oil.
Step 8: Remove and drain on a paper towel.
Step 9: Fry the rest of the calamari.
Method (Salad)
Step 1: Add all of the ingredients into a bowl.
Step 2: Mix well and serve with fried calamari.
For more flavour, serve with your favourite tartar sauce.
Notes:
1. If you don't have buttermilk, mix 1 tablespoon of lemon juice to 1 cup of milk. Allow this to rest for 5 minutes, Once the milk starts to curdle, it's ready.
2. Try and use a small pot to fry the calamari. The bigger the pot, the more oil you'll need.
