Ingredient List (Fishcakes):

400 grams Frozen Crumbed Hake Fishcakes

1 tablespoon cooking oil

 

Ingredient List (Egg Fried Rice):

1 tablespoon cooking oil

1/2 onion, finely diced

1 teaspoon garlic, finely chopped

3 eggs, lightly whisked

1/4 teaspoon salt (or to taste)

1 1/2 cup frozen peas

1 1/2 teaspoons sweet or regular soy sauce

1 1/2 teaspoons fish sauce

3 cups cooked rice (+-1 1/2 cups uncooked rice)

1/2 teaspoon salt (or to taste)

1 jalapeno or green chilli, finely chopped

10 grams basil leaves

Method (Fishcakes): 

Step 1: Preheat oven or air fryer to 180 ° C .

Step 2: Place fishcakes in an oven proof dish or air fryer basket.

Step 3: Brush with oil and cook for 15 to 20 minutes or until fishcakes are done.

Method (Egg Fried Rice)

Step 1: Place a large wok or pan on a medium heat. Add 1 tablespoon of oil.

Step 2: Add onion and garlic and sauté till onion is soft.

Step 3: Add eggs and salt and keep stirring till eggs are cooked. 

Step 4: Add sauces, rice, peas and mix well. Cover with a lid and cook for 7 to 10 minutes.

Step 5: Serve hot and garnish with basil and chopped jalapeno.
