Ingredient List:
1 large (500 grams) hake fillet
2 tablespoons apricot jam, melted
1 teaspoon chilli flakes
1 teaspoon salt
1 teaspoon garlic, finely grated
2 tablespoons olive oil
5 grams coriander, finely chopped
Method:
Step 1: Add all of the ingredients, except the fish to a small bowl and mix well.
Step 2: Cut small slits into the fish, then brush the marinade all over the fish on both sides.
Step 3: Cover in foil and allow it to marinate for 30 minutes.
Step 4: Preheat oven the to 200 °C with fan.
Step 5; Place the fish in the preheated oven for 15 to 20 minutes or until fish starts to flake.
Best served with roasted butternut and feta salad.
