400 grams chicken breast fillets, cut into thin strips
1 teaspoon ground cumin
1 teaspoon ground paprika
1/2 teaspoon chilli flakes
1 teaspoon garlic powder
1 teaspoon salt
3 tablespoons lemon juice
3 tablespoons cooking oil
1 red capsicum/pepper, finely sliced
1 green capsicum/pepper, finely sliced
1 brown onion, finely sliced
1/2 teaspoon pepper
1 tablespoon tomato sauce
2 tablespoons water
80 grams butter lettuce, finely chopped
1 jalapeño, thinly sliced
Step 1: Marinate chicken in the ground spices, chilli flakes, garlic powder, 1/2 teaspoon salt and 2 tablespoons of lemon juice. Cover and refrigerate for at least 2 hours.
Step 2: Place a large pan or wok on a medium heat. Add 2 tablespoons of oil.
Step 3: Add chicken and cook for 10 minutes or until chicken is cooked. Cook with a covered lid, stirring every couple of minutes or so.
Step 4: Remove chicken, and set aside.
Step 5; In the same pan, add the rest of the oil.
Step 6: Add capsicums/peppers and onions and season with 1/2 teaspoon salt and pepper.
Step 7: Cover with a lid and cook for 7 minutes or until veggies are soft.
Step 8: Add back the chicken with tomato sauce and water and cook for another 2 to 3 minutes.
Step 9: In a small bowl add the rest of the lemon juice to the lettuce and mix.
Step 10: To assemble your wrap, heat each wrap in a dry, warm pan, Then add lettuce, followed by chicken fajita and finally, jalapeños. Serve warm.
