Ingredient List:

500 grams pasta of choice

2 tablespoons olive oil.

4 teaspoons garlic

2 teaspoons chilli flakes

2 cans/800 grams of Italian diced tomatoes

2 teaspoons brown sugar

2 teaspoons salt

1 teaspoon pepper

1 teaspoon parsley

 

Method: 

Step 1: Cook pasta according to packaging instructions with 1 teaspoon salt.

Step 2: Once the pasta is cooked, remove 1 cup of the pasta water, then drain the rest of the pasta and rinse with cold water. 

Step 3: In a medium sized pot or pan, add oil and place on a medium heat. 

Step 3: Add garlic and chilli and sauté for 30 seconds.

Step 4: Add tomato, sugar, salt and pepper and cook till the tomatoes are soft and the most of the liquid has evaporated. Cook with a covered lid throughout, stirring frequently. 

Step 5: Add pasta and parsley and mix well.

Step 6: Cover with a lid and cook for 5 to 7 minutes. 

Step 7: Serve hot and garnish with more parsley if desired.  

Tip: I always keep freeze dried parsley in my spice cupboard. It is ideal for dishes like these where you need very little!
